In Legends: Arceus, you have to manually evolve every Pokémon once you’ve met its evolution criteria. So, say your Bergmite reaches Level 37, you’ll then need to go into your bag menu and interact with the Bergmite. From there, you’ll see its Poké Ball icon is glowing yellow - hover over the Pokémon and press X to go straight to the option to evolve it (or press A to open up the list of interaction options and select “Evolve” from that list).
